Grandma Walker's Brownies (a.k.a. Texas Sheet Cake)

My mom makes the most amazing brownies. She's never really been a big cookie or cake baker,  but there are a few cakes that she is an expert at. No one makes an angel food cake like she does, and she does these brownies right!

Grandma Walker's Brownies

2 cups sugar
2 cups flour
1/4 tsp salt
4 Tbsp cocoa
1 cup water
1/2 cup butter or margarine
1/2 cup oil
1/2 cup buttermilk
1/2 tsp. baking soda
2 eggs
1 tsp vanilla

Mix together sugar, flour and salt. Set aside. In a small saucepan, bring cocoa, water, butter and oil to a boil. Pour over sugar/flour mixture and mix well. Add buttermilk and soda, mix again. Then add eggs and vanilla. Pour into jelly roll pan (cookie sheet with sides) that has been sprayed with non-stick spray. Bake at 400 degrees for 18 minutes.

Frosting:

1/2 cup butter or margarine
4 Tbsp cocoa
4 Tbsp milk
1 lb powdered sugar
1 tsp. vanilla

Bring butter, cocoa and milk to a boil. Pour into bowl with powdered sugar and vanilla. Beat until smooth. Pour and spread over brownies while they are still warm.
