A couple of weeks ago I had a bunch of left-over baked potatoes sitting in my fridge. We were planning on grilling burgers for dinner, and I saw the potatoes and decided to try and make some homemade french fries. They were so good!
All I did was slip the skins off of the potatoes and sliced them in to little sticks. (I did it with a little slicer thing that I have. Next time, I think I will slice them by hand so that they will be a little bigger.) Then I heated up some canola oil in a little fry pan. I probably had between 1/2 and 1 inch of oil. It didn't take very much. I heated the oil on med-high heat, and once it was hot, I started adding little batches of the sliced potatoes. They cooked up really fast since they were already baked and just needed to crisp up. I just kinda stirred them a tad bit as they cooked to ensure that all parts were getting crispy. Then I just removed each batch with a slotted spoon onto a bunch of paper towels to drain, and lightly salted each batch as it came out.
We will definitely do this next time we grill burgers, and probably even before that. Baking extra potatoes when we are having baked potatoes is going to become a regular habit!

There is nothing better than homemade french fries. I started putting mine on a pan with a tiny oil on them and Lawry's seasoning and throwing them in the oven. They'll crisp up and not so oily! mmm mmm
Morgan introduced me to putting them on the grill too. Jay and I LOVE them that way. We put tin foil down on the grill, sprayed with pam, and cook the fries that way. Sprinkle them w/ Lawry's. I love it that way because it cooks along with the burgers.
