Dutch Oven Potatoes
Oh man. Is there anything better than Dutch Oven Potatoes? These are soooo good. They are good whether you are making them on a stove in your kitchen or over coals in the mountains. We love to cook in our cast iron dutch ovens, and I was really excited when my husband gave me one of those really cool porcelain-coated-cast-iron-dutch-ovens (the kind you use in the kitchen) for my birthday. It is royal blue, and so cute! These potatoes can actually be made in any pot though if you don't have a dutch oven.
Dutch Oven Potatoes
6-8 potatoes, sliced thin
1/2 pound of bacon, cut into 1 inch pieces
1 onion, chopped
1-2 cups shredded cheddar cheese
Cook bacon pieces in dutch oven until crispy. Remove bacon to drain on paper towels. Remove all but about 2 Tablespoons of the bacon fat from the dutch oven. Cook chopped onion in the remaining bacon fat until translucent. Add potatoes, and stir. Cover dutch oven and continue cooking over medium heat, stirring occasionally, until potatoes are tender. Fold bacon and cheese into potatoes. Cover until cheese is melted. Serve.

I wish I had these in Yellowstone. They look soooo good.
