This is another recipe that I got from my Sister-in-law, Lori. The first time I had it was when she made a bunch of these casseroles for breakfast at our family reunion almost 6 years ago. She shared the recipe, and I have made it often since. We always have this for breakfast on Christmas morning, and twice a year on "Conference Saturday". I usually always make cinnamon rolls to go along with it on those 3 occasions. Every person in my family loves it. I usually make one with sausage and one with ham. We end up with a lot left over, but my kiddos love it warmed up for breakfast for the next few mornings.
Breakfast Casserole
1 package frozen Hash browns (southern style, the small square cut)
1/2 cube butter, melted
4 eggs (I use 5)
1 cup whipping cream (I use 1 1/2)
2 cups shredded cheddar cheese
about 1 lb of cooked sausage, cooked bacon, or ham
Place hash browns in 9x13 pan, drizzle melted butter over the top. Bake at 375 degrees for 20 min. Meanwhile, mix eggs and whipping cream, fold in cheese, then fold in meat. Pour this mixture over the potatoes. *
Bake at 350 degrees for about 35-40 minutes.
*I usually do it up to this point the night before, then I just put it in the oven before we go downstairs to see what Santa brought.
