These shells look so much harder to make than they are. They are easy and yummy. I originally got the recipe from a Kraft Magazine, but made some changes too it. I was surprised when I made them for the first time that all my kiddos loved them. I make homemade spaghetti sauce for spaghetti and lasagna, but for this I just open a can of Hunts Original Spaghetti Sauce (the kind you can get for like $0.75 a can) and use it. Everytime I make these I double it and make an extra pan to drop off to someone who might need it.
Cheesy Stuffed Shells
1 16oz container of cottage cheese
2-3 cups chopped fresh spinach
1 cup shredded Mozzarella Cheese,
1/3 cup Parmesan Cheese
20 jumbo pasta shells, cooked, drained
1 jar spaghetti sauce
Preheat oven to 400°F. Pour about half the jar of spaghetti sauce in the bottom of a 9x13 pan. Mix cottage cheese, spinach, mozzarella, and parmesan. spoon into shells. Place shells in single layer in pan on top of sauce. Drizzle remaining sauce over the top of the stuffed shells. Cover. Bake 25 minutes.
